Peanutbutter Cookies

Ingredients

  • 3 tbsp flour (spelt, white, oat, all work)
  • 3/4 tsp baking soda
  • 1/3 cup sugar
  • 1/8 tsp salt
  • 1/2 cup natural chunky peanut butter (Teddy is the best)
  • 2 T applesauce
  • 1/2 tsp pure vanilla extract

Steps

  • Preheat oven to 350 
  • Combine dry ingredients in a large mixing bowl 
  • Add the rest of the ingredients to the flour mix in the mixing bowl and stir to form a dough.  
  • Roll into cookie balls – I recommend 10 to 11 cookies
  • Press cookies gently with a fork
  • Bake for 10 min (less time if making more cookies) The cookies might look underdone and too soft but they’ll firm up.
  • Let cool on the tray for 10 min to firm up
