Chocolate Chip Cookies

Vegan Chocolate Chip Cookies (our favorite recipe)


½ cup refined coconut oil, softened 

⅓ c light brown sugar 

¼ c granulated sugar

¼ c plant milk

1 T ground flaxseed

2 t vanilla

1 ⅓ c flour 

½ t salt

½ t baking soda

1  c chocolate chips


  • Beat oil, sugar until smooth with hand mixer or whisk
  • Add milk and flaxseed and whisk in
  • Stir in vanilla
  • Mix half the flour with the salt, baking soda and then stir into oil/sugar
  • Add the rest of the flour and the chips
  • Sprinkle with good quality crushed flaked salt

Bake at 350 degrees for 10-11 min on parchment paper.

Optional ingredient is 2 T chopped rosemary (I haven’t tried it this way)
