
Vegan Chocolate Chip Cookies (our favorite recipe)
INGREDIENTS
½ cup refined coconut oil, softened
⅓ c light brown sugar
¼ c granulated sugar
¼ c plant milk
1 T ground flaxseed
2 t vanilla
1 ⅓ c flour
½ t salt
½ t baking soda
1 c chocolate chips
INSTRUCTIONS
- Beat oil, sugar until smooth with hand mixer or whisk
- Add milk and flaxseed and whisk in
- Stir in vanilla
- Mix half the flour with the salt, baking soda and then stir into oil/sugar
- Add the rest of the flour and the chips
- Sprinkle with good quality crushed flaked salt
Bake at 350 degrees for 10-11 min on parchment paper.
Optional ingredient is 2 T chopped rosemary (I haven’t tried it this way)
